Open cans of potatoes, wash and drain them
Cut the bigger ones so that all pieces are about the same size
Put them in a bowl and add oil, dijon mustard, dried tarragon, salt and pepper
Put either in pan or baking sheet and bake at 350 degrees Fahrenheit for about 30 minutes or until they are golden
